I recently acquired a Genesis model and I can't seem to find a composite cable with stereo. Considering the model 1's audio is better, you would think stereo cables would be easy to find. I guess not though. If anybody could point me in the right direction let me know.

At one point custom cables (video from the back, audio from the front) were pretty easy to find on Ebay etc., but since everyone has moved onto RGB SCART, no one seems to be making these anymore.

The only way to get stereo without a custom cable is to take the audio from the headphone jack on the front, like back in the day.

So even if I have a mono cable I can still get stereo from the audio jack? Could I just plug in my soundbar through the headphone jack?

Yeah, that will give you stereo audio.  The headphone jack still works even if you have a cable plugged into the back.  Just plug your video cable from the back into your TV, and a standard audio cable from the headphone jack in the front to your soundbar.

Just some more info.  The reason you can't find any stereo cables for the model 1 Genesis is because they never (officially) existed, since the port on the back carries only mono audio.  The original manual that came with the console even suggested using the headphone jack plugged into a stereo for stereo audio!

Here's an excerpt from a scan of the manual:
