RGB_Gamer
Has this ever been done and if so, how?
mimo
8bitdomain did a composite mod, not sure of any s-video mods being done
jsoper
The video chip has 4 digital outputs that go through a resistor ladder (poor man's DAC) to form composite. If you want s-video, you'd have to replace the video chip with your own. An FPGA might be fast enough, dunno.

You might even be able to do this with something as simple as an EPROM feeding a resistor ladder. The biggest complication is figuring out what values to put on the chroma and luma channels.
