But I will most certainly check out that version. Thank you! As Trebor points out, MAME (in the form of SDLMAME compiled for OS X) gives the best and most complete emulation. Undoubtedly, OpenEMU gives the easiest user experience. However, as for capturing gameplay footage, that depends more on whatever software you plan to use for captures. It's not something I've ever messed with very much myself on my Macs, but if you're capturing with Quicktime, either one should work fine.
