I guess I could have tried googling some kind of list for this but these anecdotes are more fun and informative.

Steering controllers are single, so 4 max on 400/800. 

 

Paddles wouldn’t work well imho as you need the Joystick for aiming and steering. 
 

It‘s a MultiJoy game and we’ll worth building a MultiJoy if you ever take part in a gathering of people willing to play Ataris. 
 

Googling may not be the best solution as even the instructions of some games (e.g. MicroProse air combat games) mention 2-player modes but don’t reveal any details on how they actually work. 
 

Looking at some of them I found it interesting that many of the MicroProse games contain advertising for other games on the title screen, which wasn’t common at the time AFAIK.

All current multijoy games are joystick controlled since the current multijoy interface can't handle anything else.
